I'm looking for a side dish recipe with a Spanish theme containing a minimum of ingredients and preparation time.  I need it before this Friday.  I'd appreciate it if any of you could help me with this.  Thanks so much!!

1 Box Goya yellow rice  (or other yellow rice- Carolina also makes a good one)
1 can of Rotel Tomatoes and Chilies
some grated cheddar cheese
 
Make the rice- use water or chicken stock to make it really good
Dump in the can of Rotel
Throw in the cheese
 
Mix . Eat.
Put sliced, grilled chicken breast on the plate and people think you can really cook.

I also like RiceaRoni spanish rice. Easy to make and good.

Oh Yeeeaaah! I'm a BIG Rice-a-roni fan myself! Refried beans makes another yummy side.But you can get that canned.

How about a dip made with Picante sauce and Velveeta cheese?  It is really simple to make and serve with tortilla chips.
 
Any box of velveeta will give you the recipe and how long you need to microwave it.
