Hi TRose! Yes it is Summer squash.My Gm gave me this recipe.
Yellow Squash Casserole:
2 lbs yellow squash(sliced)
1 cp water
2 sm. onions(minced)
2 Tbs butter
1 cp Ritz cracker crumbs(divided)
11/2 cp grated cheese
2 eggs(beaten)
1/4 cp Baconbits
1 2oz jr diced pimento(drain)
1/4 tsp salt
1/4 tsp pepper
Bring squash & water to a boil.Cover,reduce heat & simmer for 10mins.Drain & mash,set aside.Saute' onion in butter until tender.Combine onions,squash,3/4 cp crackercrumbs,cheese & remaining ingred.s.Spoon into a lightly greased 2qrt casserole dish.Sprinkle on remaining crackercrumbs.Bake @ 350 for 45mins.
