Cajun Cheez Dip
1 lb. pork sausage
1/2 c. chopped onion
1 lb. process cheese, cubed
1 can Rotel chilies and tomatoes
1 t. ground thyme
3/4 t. ground red pepper
2/3 t. ground mustard
Brown and crumble sausage along with onion in large skillet. Drain. Add remaining ingredients and cook, stirring often, on medium heat until cheese is melted.
Serve with crackers or tortilla chips.
