Bake a Cake for Two

Unless you buy cake mixes for one, you're probably going to have too much left over. Use this formula to make two cakes out of one two layer mix.

1-3/4 cups cake mix from two layer box
2/3 cup water
1/4 cup oil
1 egg

Combine ingredients in an ungreased 8 or 9" square pan and beat with fork until well blended. Spread batter evenly in the pan when mixed. Bake at 350 degrees for 30-35 minutes or until toothpick inserted in center comes out clean.

 

Banana Cake

1-3/4 cups cake mix from two layer box
1/2 cup miniature chocolate chips
2/3 cup water
1/2 cup mashed banana
2 Tbsp. oil
1 egg

Mix all ingredients in a medium bowl. Pour into greased 8" square pan and bake 350 degrees 30-40 minutes until toothpick comes out clean.

Cozy Lime Chicken recipe

1/4 cup fresh lime juice
1 tablespoon olive oil
4 broiler-fryer chicken parts
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
3 ounces sliced mushrooms, sautéed in butter

In small bowl, combine lime juice and olive oil. Dip each chicken part in mixture, covering completely. On foil-lined baking pan, arrange chicken in single layer; sprinkle with salt and pepper. Arrange oven rack at least 6 inches from heat and set temperature to broil. Broil about 15 minutes; turn and pour remaining lime-oil mixture over chicken. Broil about 15 minutes more, until fork can be inserted into chicken with ease. Pour mushrooms over chicken and return to oven for about 2 minutes, until mushrooms are hot.

Makes 2 servings.

 

Avocado Glazed Chicken Breast recipe

Serves 2.

1/4 cup all-purpose flour
Vegetable oil
1/4 teaspoon salt
1 teaspoon tarragon
1 teaspoon pepper
1 teaspoon basil
1 large whole chicken breast, boned, halved (skin on)
2/3 cup white wine
1 tablespoon sweet butter
1 egg, beaten
1 small ripe California avocado

Mix flour, salt and pepper. Dip chicken in egg then flour mixture to coat.

Heat a thin layer of oil in skillet. Sauté chicken skin side down until golden. Turn and sauté other side until chicken is tender. This will take about 7 to 10 minutes for the whole operation.

Sprinkle herbs over chicken. Add wine and butter to pan. Bring to boil and simmer uncovered for 3 to 5 minutes until sauce thickens and becomes glossy.

Place halved avocado cut side down and slice. Press down on avocado with palm of hand to fan slices slightly. Lift with knife or spatula to top of chicken. Spoon some pan juices over top. Cover skillet and heat briefly just to warm through.

Double Boiler Raisin Bread Pudding for Two (T&T) recipe recipe

 

 A layer of brown sugar on the bottom of the pan makes a delectable sauce for the pudding, while also protecting the custard from contact with the hot pan. - LuAnn

1/4 cup brown sugar
2 tablespoons raisins
1 tablespoon butter or margarine
2 slices frozen or firm bread - easier to spread
1/4 teaspoon cinnamon
3/4 cup milk
1 egg
2 tablespoons granulated sugar
1/4 teaspoon vanilla extract

Grease the bottom and half way up the sides of the top half of a double boiler. Firmly pat the brown sugar into the pan, completely covering the bottom. Sprinkle the raisins over the brown sugar; set aside.

Spread the butter on the bread. Sprinkle on the cinnamon; rub into the butter. Cut the bread into 1/2-inch cubes; set aside.

In a small bowl, whisk together the milk, egg, sugar, vanilla extract and salt. Add the bread cubes, stirring gently to coat. Carefully, taking care not to disturb the layer of brown sugar, pour the milk and egg mixture against the back of a large spoon into the prepared pan.

Place the double boiler over cold water; cover. Over low heat, cook until set in the center, about 1 hour. (Shake pan gently to test firmness). Spoon the warm pudding into dessert dishes; spoon the brown sugar-raisin sauce from the bottom of the pan over the pudding.
