This is a recipe handed down to us from a Mennonite family that lived near us.  It is really good and has become part of a Christmas tradition in our family.
 
 
 
Apricot Bread
 
1 c. dried apricots (1 box = 2 cups)
1 c. sugar
2 c. sifted flour
2 Tbs. shortening
1 tps. salt
1/4 c. water
1/2 c. orange juice
1/4 tps. baking soda
2 tps. baking powder
1/2 c. nuts
1 egg
 
Preheat oven to 350 degrees.
 
Soak apricots for 30 minutes in warm water.  Drain and cut into fourths.  Set aside.
 
Mix sugar, shortening and egg..  Stir in water and orange juice.  Sift flour, powder, soda, and salt together.  Stir into egg mixture.  Blend in nuts and apricots.
 
Line bottom of greased loaf pan ( 9 1/2 x 5 1/4 x 2 3/4) with waxed paper.  Grease waxed paper.  Pour batter into loaf pan and let stand 20 minutes.  Place in preheated oven and bake for 55-65 minutes.
 
Remove from pan and cool on rack.

Adair, this sounds divine.  I am certainly going to try this.  It sounds like it might make a lovely addition to the holiday baskets of baked goods I make to give out.  Thanks for sharing!
