MOZZARELLA NUGGETS
12 sticks of mozzarella string cheese
6 sun dried tomatoes, not packed in oil
4 eggs
2 cups flavored bread crumbs
3 cups oil
1 cup marinara sauce
Cut each cheese stick into thirds. Cut a opening along the length of each piece. Soak tomatoes in boiling water for 5 min. Place them in a stack. Slice stack crosswise into 6 slices for a total of 36. Tuck one tomato slice into a piece of cheese. Repeat. Break 4 eggs into a bowl. Beat lightly. Place 2 cups bread crumbs in a pie plate. In a saucepan, heat oil. Dip 36 cheese nuggets in egg, then coat with bread crumbs. Repeat. Set aside on a platter. Fry 6 cheese nuggets at a time until golden brown. Remove from oil. Place on paper towels. Keep warm in 200° oven while frying remaining nuggets. Heat marinara sauce in microwave 1 min. SERVE NUGGETS ALONGSIDE WARM SAUCE. Makes 36 nuggets
