Barbecue : Barbecued Sweet Potato Apple Kabobs

Barbecued Sweet Potato Apple Kabobs

Prep Time 10 minutes
Cooking Time 25 to 35 minutes
Serves 4
Ingredients

2 sweet potatoes, or yams
2 apples, cored and cut into chunks
1/4 cup barbecue sauce
8 metal skewers
canola oil, for the grid, if using a grill

Directions

Boil the sweet potatoes or yams for about 20 minutes, or until tender enough that a fork will pierce almost to the center. Peel and cut into chunks.

Alternately thread the sweet potato or yams and apple chunks onto skewers, starting and ending with potatoes.

Prepare the grill or electric grilling machine for cooking.

If using a charcoal grill, brush the grid with oil and place it above ashen coals. Place the kabobs on a part of the grill that is not over direct heat. Brush the top side with barbecue sauce and grill for about 10 minutes. Turn, brush with sauce, and cook for about another 5 minutes, or until the potatoes are tender in the center.

If using an electric grilling machine, brush both sides of the kabobs with barbecue sauce. Place the skewers on a hot grill and cook for 3 to 4 minutes, or until the potatoes are tender in the center.
