     The weather here has been ideal today. Starting with the 60's in the AM and low humidity (rare) and climbing into the high 80's this afternoon. Only a 20% chance of rain tomorrow, which equates to 80% of sunshine!   LOL!  I decided to not to cook tonight and go to Sam's Club and pick up 2 of their rotisserie chickens for dinner tonight.
   Evidently their time schedule does not match mine, the chickens were to be out in 20 minutes. Knowing my will power and all that "stuff" that they sell, I opted to buy a rolled Pork roast instead. I dry rubbed and set it out to "sweat" Slo-cooking it at 250 degrees and basting every 1/2 hour with red wine vinegar, BBQ sauce and left over dry rub. I placed some red wine in the bottom of the pan along with some water and a few splotches of hot sauce. Allow to rest, cut and reduce the drippings  to pour over the sliced pork. Cook to be done at 160 degrees.....Nummy -Nummy...Ed
