2 cups of Minute rice--uncooked
1 egg--beaten
1/2 cup + 2 tsp. white sugar
1 cup Milk
1/2 tsp. vanilla extract
1/2 tsp. ground cinnamon
2 Tblsp. butter--cut in pieces
 
Preheat oven to 350.
Prepare rice as directed on package.
While rice is on stove, mix the egg and 1/2 cup of the sugar in large bowl, until well blended.
Add the milk and vanilla and mix well also.
Stir cooked rice into the egg mixture. 
Pour into ungreased 1 1/2-quart casserole dish. Sprinkle with 2 tsp. sugar and cinnamon.  Dot with butter pieces. 
Bake until set, for 20 minutes.  Serve warm.
Makes 4 to 6 servings.

I'm very sorry that it has taken me so long to answer you Doc.  I made this recipe up and never thought about it to resemble rice pudding, but it sure sounds like it does.
