i usually just cut it in half and bake till soft, then add butter and eat. some like brown sugar on it. or cut in slices and roasted is good too.

What is a good recipe for butternut squash?
The only way I make it is in a casserole as a sidedish.

Some lady was telling me about a roasted butternut canneloni she made the other day.... and you know what, this does sound like a good combo!

you can make great soup with butternut squash too, and maybe with some of the others too.

I've had pumpkin soup, and it was really good.  I expected it to be sweet, but it was just slightly salty.  I really liked it.

i would say that if you liked pumpkin soup you would like squash soup. I have to say i dont care for the pumpkin except in pie with tons of spices but i like squash soup.

my sister does the pies, baking is a thing i hate. I know you are a chef and all but my sister is a great baker. she doe use the canned pumpkin but its the homemade crust and the really major spices that make her pie the best. also its much firmer than most peoples pies . omg its sooooo good.

We don't make acorn squash often but before putting it in the oven I liberally brush it with melted butter and maple syrup....it comes out pretty good.
 
Oh, we also like spahgetti squash, too, but it's more expensive then some of the other squashes so we don't get it as much.....even though it's my favorite.

I haven't done it in years but found using cheese pumpkins are the best when making from-scratch pumpkin pies.  Just saw some in Wal-Mart the other day.
