We only get a turkey breast so we don't have that much leftovers; we eat on it a couple of days and then put the rest in the freezer. My sister and I both work all day, and then have dinner with Mom. We never know what she's gonna have in mind for dinner, sometimes she cooks and sometimes we go out (it's her choice, since she's the one that has to do the work if she cooks). It's so nice to come home one cold evening (even if it's not cold) in January or February to a nice hot turkey dinner!
She gets a spiral sliced ham from the regional grocery chain (I've mentioned it before, H.E.B.) for Thanksgiving every year. After she heats it for the dinner, she divides the meat in half, and we freeze the other half for later. She cuts the chunks of ham off the end of the bone and we freeze several packages of that for cooking with beans. We eat ham for Thanksgiving dinner and then have sandwiches until it's gone (after we send a pile of it home with my brother for his lunches).
The turkey breast and the spiral sliced ham work out perfectly for the four of us. There is almost NO waste.
