Honey Lemon Squares

Honey and lemon marry deliciously in these easy lemon squares.
Recipe Cookbook Fabulous Food Associations

Prep Time 15 minutes

Cooking Time 40 minutes

Serves makes 12 squares


Ingredients

1/2 cup butter or margarine, softened 
1/4 cup powdered sugar 
1 cup + 1 tablespoon flour, divided 
3/4 cup honey 
1/2 cup lemon juice 
3 eggs 
1 teaspoon grated lemon peel 

1/2 teaspoon baking powder


Directions

Preheat the oven to 350 degrees F.

In a medium bowl, cream the butter and powdered sugar until light and fluffy. Add 1 cup of flour and mix until combined.

Press the mixture evenly into the bottom of a 9-inch square pan. Bake for 20 minutes or until lightly browned.

Meanwhile, in a medium bowl, whisk together remaining tablespoon of flour with the remaining ingredients until thoroughly blended.

Pour over the baked crust and bake for about 20 minutes longer or until the filling is set.

Cool in the pan set on a wire rack. Cut into squares to serve.
