Ingredients:
4 cups chicken broth
1/2 tsp salt
2 cups rice
1 tsp cumin
1 tomato chopped
2-4 tsp fresh cilantro
1 tsp lime peel
2 tsp lime juice ( i just squeezed one lime)
Bring broth and salt to boil, add rice and cumin. Reduce heat, cover, simmer 20 min or until rice is tender.(If you have a rice cooker just put broth, salt, rice and cumin in cooker, make sure to mix well). When rice is done, stir in remaining ingredients.
This recipe feeds 4-5 people and my kids liked it.
