This recipe comes from a cookbook I bought years ago in Louisiana. My dh claims this is the best thing I make. It takes about an hour to make it including prep time, but it is so good!!! Yes my kids love it too!

Baked Potato Soup
 
4 potatoes
4 tables margarine
2/3 cups all purpose flour
6 cups milk
4 green onions-chopped
12 slices bacon-cooked, crumbled
1 1/4cup shredded Chedder Cheese
1 (8oz) sour cream
 
Wash potatoes and cook (either in oven at 400* for an hour, or in microwave for 12 min). Let cool. Cut potatoes in half and scoop out pulp, set aside in a bowl. Discard skins. Melt margarine in a heavy saucepan over low heat. add flour, stirring till smooth. Cook 1 min, stirring constantly. Gradually add milk, cook over med heat, stirring constantly, until mixture is  thickened and bubbly. Add potato pulp, seasoning(like creole), 2 tablespoons green onions, 1/2 cup bacon, and 1 cup cheese. Cook until thoroughly heated. Stir sour cream. Add extra milk, if desired for consistancy. Serve with remaining green onions, bacon, and cheese. Yields 12 servings.
