Peach Crepes with Easy Grand Marnier Sauce
Crepes
1/2 cup flour
Pinch salt
2 egg whites, lightly beaten
1/3 cup 2% milk
1/3 cup water
1/2 tsp. soft margarine
2 tsp granulated sugar
In bowl, combine flour, sugar and salt. Make a well in center and add egg whites. While whisking, gradually add milk and water, whisking until mixture is smooth.
Heat non-stick skillet over med high heat. Brush margarine over bottom of pan. Add 2 Tbsp batter and swirl to cover bottom of pan. You should have enough batter to lightly coat bottom of pan. Shake pan and cook until edges begin to curl and crepe no longer sticks to pan. Turn crepe and cook for a few seconds or until golden. Remove from pan and set aside.
Crepes can be made in advance; stack between waxed paper and refrigerate for one day or freeze up to one month.
Makes 8 crepes.
1/2 cup low-fat plain yogurt
1 Tbsp maple syrup or honey
3 fresh peaches, peeled and sliced
8 Dessert Crepes
Sauce
3/4 cup orange juice
1Tbsp cornstarch
3 Tbsp Grand Marnier, Drambuie or other orange liqeur
Sauce: In saucepan , combine orange juice with cornstarch. Whisk until smooth. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil; simmer for 2 minutes. Remove from heat and stir in liqeur.
In bowl, combine yogurt with syrup or honey; stir until smooth. Add peaches and mix lightly.
Wrap crepes in paper towels and heat in microwave at high power for 30 seconds or heat in a 350 degree oven for 5 - 10 mins, until warm.
Spoon some peach mixture onto each crepe; roll up and place on individual plates. Drizzle with warm sauce and garnish with fresh fruit. (It is good cold too)
Makes 8 crepes. One crepe equals 1/2 bread exchange and 1 fruit exchange
