Ingredients
4 eggs 1 1/2 cup corn oil 3 cups shredded zucchini 1 cup chopped nuts 3 cup flour 1 1/2 tsp cinnamon 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp salt 1 1/2 cup sugar
Procedure
Beat eggs and sugar until foamy. Add corn oil. Stir in zucchini and nuts. Combine flour, cinnamon,baking soda,baking powder, and salt, stir in batter. Bake in well greased and floured loaf pans at 350* for about an hour. Makes 2 loaves.
