Apple Muesli Recipe

Ingredients:
1 cup old-fashioned rolled oats
3/4 cup apple juice
2 tablespoon vanilla yogurt
1/3 cups sliced almonds
1/3 cups diced fresh apple

Instructions:
Combine all ingredients. Chill until very cold, about 30 minutes.

Macadamia Nut Granola Recipe

Ingredients:
8 cups regular rolled oats
1 1/2 C brown sugar (I use 1 cup)
1 1/2 C wheat germ
8 oz. shredded coconut (2 1/4C)
1 1/2 C raw macadamia nuts (8 oz)
1 C sunflower seeds
1/2 C to 1 Cup pumpkin seeds
1/2 C canola oil
3/4 C honey
2 tsp. vanilla extract

Instructions:
Preheat oven to 325 degrees. In large bowl, stir together oats, brown sugar, wheat germ, coconut, nuts, and both seeds. In a small saucepan, heat canola oil, honey and vanilla until bubbling.. Pour hot mixture over oat mixture and mix thoroughly.

Grease two 10 x 15 inch baking sheets. Divide granola mixture between pans, spreading evenly. Bake for 20 to 30 minutes (or longer), stirring a few times until coconut is lightly browned. Remove from oven and cool, stirring several times. Store in airtight container. Makes 16 cups plus.

*We love this as a topping on yogurt, or just a snack

Fourteener's Granola Recipe

Ingredients:
4 cups old fashioned oats
1/4 cup brown sugar
2 tsp cinnamon
1/2 cup chopped walnuts
1/2 cup sunflower seeds
1/2 cup orange juice
2 Tbsp honey
2 Tbsp vanilla
1/2 cup raisins
1/2 cup Craisins (or dried cranberries)
1/3 cup chopped dried apricots


Instructions:
Preheat oven to 350 degrees. In large bowl, mix together oats, sugar, cinnamon, walnuts and sunflower seeds. In microwave bowl, mix orange juice, honey, and vanilla. Microwave 1 minute or just until honey is melted and mixture is blended.

Pour orange juice mixture over oat mixture and stir well to coat. Spread mixture into large baking pan. Bake for 30 minutes, stirring every 10 minutes, until mixture is golden. Remove from the oven and add the raisins, Craisins and dried apricots. Cool well before storing.

*When making oatmeal, add 1-2 Tablespoons granola just before it is totally cooked.

Granola Cereal Recipe

Yield: 8 servings  

Ingredients:
1 cup margarine
1 cup packed brown sugar
2 tsp vanilla
6 cups quick oats
6 cups cornflakes or bran flakes
1 cup wheat germ (I use toasted)
1 cup sunflower seeds
1 cup nuts (any kind)
1 cup raisins
dried apricots, dried cranberries, dried dates

Instructions:
Put first 3 ingredients in medium saucepan. Bring to a boil. Simmer five minutes, stirring occasionally. Place the next 6 ingredients in a large baking pan. Mix well. Pour above hot mixture over dry ingredients. Stir until coated. Cool slightly, then toss the mixture with hands to fully coat. Bake at 350 degrees for about 10 minutes. Remove from oven and stir in the dried fruits. Be creative and add what you like! Allow to completely cool and store in an air-tight container

1 1/4 tsp salt
2 tsp cinnamon
3 tsp vanilla


Instructions:
Pour over oat mix and combine well. Spread a thin layer on baking sheet. Bake for 30 minutes at 300 F. Cool and add any dried fruit you wish. Keeps well for up to 5 months in an airtight container.

Part 1:
6 cups rolled oats
1 cup wheat germ
1 cup salted sunflower seeds
1 cup (plus more as you wish) chopped pecans and/or walnuts
1/8 cup Cinnamon

Part 2:
½ cup canola oil
¼ cup honey
¼ cup brown sugar
2 Tbsp vanilla

Part 3:
¼ cup Coconut
1 cup raisins
Assorted chopped dried currants, cranberries, apricots, bananas, dates, papaya, etc. (Hint: you can buy fruit-only trail mix and chop that up)

Hearty Dragonfly Hot Cereal Recipe

Ingredients:
Soak overnight 2 cups Quinoa (pronounced Keen Wa). In the morning, rinse well (scrunching to get off bitter outer layer of saponas). Put in rice cooker. Add 4 cups boiling hot water (or Celestial Seasonings "Bengal Spice" Tea for added flavor). Press down "on" button of rice cooker and wait about 20 minutes. In the meantime, lightly roast 1 cup of pecans in a skillet (no oil) until pecans are fragrant. Allow pecans to cool down. Grind pecans and 1/2 cup fresh (golden if possible) organic flax seeds (preferably done in a vita mix--but a seed grinder or coffee grinder will do). Combine a few spoonfulls of ground pecan/flax seed with each bowl of cooked quinoa cereal when the cereal has slightly cooled so as to not heat the flax, adding a Tablespoon of fresh refrigerated flax seed oil if desired.

For an extra sweet delight, make a topping: 1 cup of fresh or dried soaked figs, 2 tbsp sesame tahini, 1/2 tsp mellow white miso. Blend in mixer, adding water, yogurt, or Bengal Spice Tea to desired consistency.

This healthy, yummy breakfast treat was created by our dear friend/frequently returning Dragonflyer, Tracy Holzman, who has joined the staff to organize and cook for retreats and workshops.

Apple Cranberry Granola Recipe

Ingredients:
6 cups old fashioned oats
1 cup sweetened coconut
1 ¼ cups apple juice concentrate
1 ½ cups sliced almonds
½ cup wheat germ
1 tablespoon vanilla
½ cup brown sugar
2 ½ - 3 tablespoons cinnamon
1 cup dried cranberries
1 cup sunflower seeds
½ cup raisins
½ golden raisins

Instructions:
In a large bowl, combine the first 9 ingredients until thoroughly mixed. Spread evenly in 2 slightly greased 13x9 baking pans.

Bake in 300 degree oven for 20 minutes. Stir gently. Bake @ 15 minutes more or until golden. Watch carefully that granola on bottom of pan doesn’t burn. When slightly cooled, add cranberries and raisins. Store in an airtight container (glass is best) or freeze.

Comments:
Apple juice concentrate replaces oil in this recipe to not only reduce fat content, but also add flavor. Great with vanilla yogurt or milk and perfect to use in a filling for baked apples or baked peaches.

Greenville Arms 1889 Inn Granola Recipe

3/4 cup water
3/4 cup canola oil

Instructions:
Combine dry ingredients in a large roasting pan. Stir together the liquid ingredients (they combine best if you warm up the honey), then pour over dry ingredients and mix well. Spread out evenly in the roasting pan.

Bake at 275 degrees, stirring often, until the mixture is a deep golden brown. This may take 2 hours or more. If it seems to be browning too quickly, turn the temperature down. Be sure not to burn! Allow to cool before stirring in raisins or other dried fruit if you wish (do not roast raisins!). You may substitute similar amounts of your favorite nuts and seeds for those listed, as you wish, to vary the flavors and textures.

Instructions:

Michigan Baked Oatmeal Recipe

Ingredients:
2 cups old fashioned oats
4 cups milk (dried milk works great)
1/2 teaspoon almond flavoring
1/4 cup brown sugar
1/2 cup sliced almonds (addition for topping if desired)
1/2 cup dried cherries
1 large apples, unpeeled and grated

Instructions:
Preheat oven to 400 degrees.
Coat a 3 quart casserole or 9" x 9" baking pan with cooking spray. In a mixing bowl, combine all the ingredients. Transfer to the baking dish. Top with addition almonds if desired. Baked uncovered for 30 to 40 minutes or until bubbly.
This will thicken as it sits. It also reheats in the microwave the next day very well.

Fiddler's Favorite Granola Recipe

Ingredients:
3 cups old-fashioned heavy rolled oats
1 1/4 cups whole wheat flour
¼ cup cornmeal
1/2 cup (packed) golden brown sugar
¾ cup sliced almonds
1/2 cup sesame seeds
½ cup flax seeds
1/2 cup dry nonfat milk powder
1/4 cup shelled unsalted sunflower seeds
1/2 teaspoon salt
1/2 cup vegetable oil
1/2 cup water
1/4 cup honey
3/4 teaspoon vanilla extract
3/4 teaspoon maple extract

Instructions:
Preheat oven to 275°F. Combine old-fashioned oats, whole wheat flour, golden brown sugar, almonds, milk powder, sesame seeds, sunflower seeds, flax seeds and salt in 13x9x2-inch metal baking pan. Whisk vegetable oil, 1/2 cup water, honey, vanilla extract and maple extract in medium bowl to blend. Add to dry ingredients in pan and stir to coat well. Bake until granola is golden and crunchy, stirring frequently (very important to stir every 7-10 minutes, so that the granola doesn’t scorch), about 50 minutes. Allow big chunks to remain intact. Cool completely.


Granola can be prepared up to 2 weeks ahead. Store in airtight container at room temperature.
