Okay let's see.........
Mix 4 parts Brown Sugar to 1 part Chili Powder
and add 1 tbsp of Italian Seasoning
So say you are making 1 chicken
Maybe 1 cup Brown Sugar
1/4 cup Chili Powder
1 Tbsp Italian Seasoning
Making 2 chicken then double the amount
I actually taste as I go to make sure the sugar and chili is balanced
Next you loosen the skin from the chicken from the (top) neck side.
It is easier to do in the sink with a little running water
Be very careful not to tear the skin.
Just slowly work your hand in to loosen it.
I even work my way down to the legs and loosen them
and do the front and back. Then place the seasoning mixutre
in between the skin and the meat. Working it down to the legs
and it may seem like alot of seasoning but use it all.
Open up your can of beer (Very important, LOL!)
and then poke a few steam holes in the top as well.
Empty out about 1/3 of the beer from the can.
Then once your grill is ready (about 325º - 350º)
We cook on a charcoal grill.
Place the beer every so gently up the chicken's and set it on the grill. Bring the legs forward and that will balance
the chicken. Honest!
Close the lid and let it cook for 1 1/2 hours
And that's it.
