Mexican Wedding Cakes
1 cup butter -- softened 1/2 cup powdered sugar -- sifted 1 teaspoon vanilla 2 1/4 cups flour -- sifted 1/2 teaspoon salt 3/4 cup nuts -- finely chopped
Mix together thoroughly butter, powder sugar and vanilla. Sift together flour and salt; stir in. Add nuts. Chill dough. Roll into 1" balls; place on ungreased baking sheet. Bake in 325ºF oven until set but not brown, around 18-20 minutes. While still warm, roll in powdered sugar; cool. Roll in powder sugar again. Yield: 4 dozen cookies. |
