   2 1/4  Cups          all-purpose flour
   1      Teaspoon      baking soda
   1 1/4  Cups          light brown sugar
     1/4  Cup           salted butter
     1/2  Cup           sour cream
   1 1/2  Cups          mashed bananas
   1      Large         egg
   1      Teaspoon      pure vanilla extract
   6      Ounces        melted semisweet chocolate chips
   1      Tablespoon    orange zest
                        Ganache:
     1/2  Cup           heavy cream
   6      Ounces        semisweet chocolate chips
   1      Teaspoon      orange zest

      Cake: Preheat oven to 350 degrees.
Grease a square baking pan.
Combine flour and baking soda and mix well and set aside
Blend sugar and butter using electric mixer and scrape sides of bowl when necessary.
Add sour cream, banana, egg and vanilla and beat until smooth.
Add flour mixture and blend just until combined on low speed.
Gently fold in melted chocolate and zest and stir just until marbled pattern develops.
Do not overmix.
Pour batter into baking pan.
Bake 40-45 minutes or until toothpick inserted intocenter comes out clean.
Cool in pan 15 minutes and invert onto rack. Cool to room temperature.    

Ganache: scald cream in saucepan and remove from heat.
Add chocolate and zest. Stir until blended and cover pan. Set aside.
After about 15 minutes, stir frosting until it is smooth and pour into a bowl.
Chill until firm. Flip cake right side up onto a serving plate and frost with ganache.

   6      Oz            Semisweet Chocolate, (Chips Or Squares)
   2      C             All-Purpose Flour
   1      Tsp           Baking Powder
     1/2  Tsp           Baking Soda
     1/2  Tsp           Salt
   8      Tbsp          Unsalted Butter -- at room temperature
   1      C             Granulated Sugar -- plus 2 Tbs
   2      Lg            Eggs
   1      tsp           Vanilla Extract
   1      C             Sour Cream, Reduced-Fat Or Regular
     2/3  C             Toasted Almonds* -- chopped
   1      tsp           Ground Cinnamon

* Buy almonds that are already chopped and toasted. Or buy chopped
blanched almonds, spread them on a cookie sheet, and bake 10 to 15 mins at
350 F., until medium brown.

Heat the oven to 350 F. Grease a 10 X 4-inch tube pan with removable
bottom. Melt the chocolate in a microwave or in a small, heavy saucepan
over low heat, stirring often. Remove from the heat.
Put the flour, baking powder, baking soda, and salt into a bowl. Stir to
mix well.
In a large bowl beat the butter and 1 cup sugar with an electric mixer at
high speed until pale and fluffy. Add the eggs one at a time, beating
after each. Scrape the sides of the bowl. Beat in the vanilla.
Reduce the speed to low. Add about 1/3 of the flour mixture and, not
waiting until it is completely mixed in, about 1/3 of the sour cream.
Continue until all the flour and sour cream have been added, mixing only
until blended.
Spread about half the batter in the prepared pan. Drop melted chocolate in
spoonfuls over the batter and spread gently with a rubber spatula.
Sprinkle with about 1/2 the nuts. Drop the remaining batter on top of the
nuts and spread gently. Mix the remaining nuts with the cinnamon and 2 Tbs
granulated sugar. Sprinkle over the batter.
To create a marbled or swirled effect, hold a table knife upright in the
batter, almost touching the bottom of the pan. Make zigzag 'cuts' through
the batter from side to side all the way around the pan.
Bake until a wooden pick inserted in the center comes out clean, about 1
hr. Place the pan on a wire rack to cool for 20 mins. Cut around the edge
of the cake and tube with a knife to loosen. Remove the pan sides. Let the
cake cool completely before removing from the pan bottom. Serve with a few
hours or wrap airtight and keep at room temperature overnight, or freeze.

   1      package       White cake mix
   5      drops         Red food coloring
   5      drops         Blue food coloring
   5      drops         Yellow food coloring

This colorful cake is dazzling, but simple. J
ust follow the directions for placing the colors and the colors will mix themselves.
Prepare the cake mix according to directions, or use your favorite white cake recipe.
Set aside three 1/2 cup portions of batter and pour the
remainder into a 9' by 11' pan that had been greased and floured.
To each of the 1/2 cup portions, add 3-5 drops of one food color
so that you have 1/2 cup each red, blue and yellow
. Next, spoon 1/4 cup of each of the colored batters in the cake mix in the baking pan,
making a half circle.
Then, repeat the procedure with the remaining 1/4 cup portions
(you should have a full circle of red, blue, yellow, red, blue, yellow.)
Using a knife, blend the colors together with swirling strokes,
so that the colors will touch and mix into colors of the rainbow.
Bake the cake as directed.
Frost with your favorite frosting or dust with confectioner's sugar.

                        Malted Coconut Marble Cake

   2      teaspoons     Baking powder
   1      teaspoon      Salt
   1      cup           Shortening
   2      cups          Sugar
   4                    Eggs -- well beaten
   1      cup           Milk
   1      teaspoon      Vanilla extract
     1/2  cup           Chocolate malted milk powder -- frosting-see note

A senior winner in the 1953 Pillsbury bakeoff.

Cream Sugar and shortening until fluffy.
Sift flour, baking powder and salt together.
Beat eggs very well then add milk and vanilla and mix well.
Beat egg mixture into sugar mixture alternately with flour mixture.
Place two cups of the batter in second bowl.
Add 1/2 cup chocolate malted milk powder. BLEND well.
Spoon yellow and malted batters alternately into 10 inch tube pan well,
greased and floured on bottom only. Bake 350 60-70 minutes or until done.
Frost then put under broiler for 2-5 minutes until delicately browned.

* Broiled Coconut Frosting: 
Combine 1/4 cup melted butter or margarine,
1/2 cup firmly packed brown sugar, 1 cup chopped coconut,
and 1/4 cup cream mix well.

                        Marbled Peanut Butter Cake

   1      package       fudge marble cake mix
   1 1/2  cups          peanut butter
   1 1/4  cups          water
   4                    eggs
   1      can           chocolate frosting
     1/4  cup           peanuts -- chopped

Heat oven to 350.  Grease and flour 13 x 9 pan.  Beat cake mix, 1 cup
peanut butter, water and eggs in large bowl on low speed 30 seconds.  Beat
on medium speed 2 minutes.  Continue as directed on package.  Bake 35 to
40 minutes.  Cool completely.  Mix frosting and 1/2 cup peanut butter.
Spead over top of cake.  Sprinkle with peanuts.

   2      teaspoons     Ground cinnamon
   1      package       Yellow cake mix
   4                    Eggs
     1/4  cup           Sour cream
     1/4  cup           Granulated sugar
     1/2  cup           Veg. oil
     1/4  cup           Water
                        Powdered sugar (opt)

Combine pumpkin and cinnamon in med. bowl.
Combine cake mix, eggs, sour cream, sugar, oil
and water in large mixer bowl. Beat on low speed until moistened.
Beat on high speed for 2 minutes.
Stir 2-1/2 c. batter into pumpkin mixture.
Alternately spoon plain and pumpkin batters into greased 10-cup bundt pan
or round tube pan. Bake in preheated 375 oven for 40 to 45 min.
or until wooden pick inserted near center comes out clean.
Cool in pan for 20 min; remove to wire rack to cool completely.
Dust with powdered sugar before serving.

   1      package       Yellow cake mix -- pudding in
   1      small         Pistachio instant pudding
   4                    Eggs
     3/4  cup           Water
     1/4  cup           Oil
     1/2  teaspoon      Almond extract
     1/4  cup           Chocolate syrup
   5      drops         Green food coloring

Preheat oven to 350~. Combine the cake mix, pudding, eggs, water,
oil and extract in a large mixer bowl.
Blend then beat at medium speed for 4 minutes.
Measure 1 cup of the batter in a separate bowl; blend in the chocolate syrup.
Blend coloring into the remaining batter.
Spoon batters alternately in a greased and floured 10 inch bundt pan.
Zigzag spatula through batter to marble.
Bake at 350~ for 50-55 minutes or until cake tester inserted near the center
comes out clean. Do not underbake.
Cool in pan about 15 minutes. Remove and finish cooling on rack.

                            Spice Marble Cake

   2      cups          Sifted cake flour
   2      teaspoons     Baking powder
     1/4  teaspoon      Salt
     1/2  cup           Shortening
   1      cup           Sugar
   2                    Eggs -- well beaten
     2/3  cup           Milk
   1      teaspoon      Cinnamon
     1/2  teaspoon      Cloves
     1/2  teaspoon      Nutmeg
   2      tablespoons   Molasses

Sift flour with baking powder and salt.
Cream shortening and sugar until fluffy. 
Add eggs and beat thoroughly.
Add sifted dry ingredients and milk alternately in small amounts,
beating well after each addition. Divide batter into 2 parts. 
To one part, add spices and molasses.
Drop by tablespoons into greased loaf pan, alternately light and dark mixtures.
Bake in a 350 degree oven for 1 1/4 hour or until firm to the touch.

Spread Butter Frosting on top and sides of cake.
Makes 1 (8x8 inch) cake.
