Bavarian Beef
This classic German stew is made with lean trimmed beef stew meat and cabbage.

1-1/4 lb
lean beef stew meat (trimmed
of fat), cut in 1-inch pieces

1 Tbsp
vegetable oil

1 large
onion, thinly sliced

1-1/2 cups
water

3/4 tsp
caraway seeds

1/2 tsp
salt

1/8 tsp
black pepper

1
bay leaf

1/4 cup
white vinegar

1 Tbsp
sugar

1/2 small head
red cabbage, cut into 4 wedges

1/4 cup
crushed gingersnaps


1.. Brown meat in oil in a heavy skillet. Remove meat and sauté onion in remaining oil until golden. Return meat to skillet. Add water, caraway seeds, salt, pepper, and bay leaf. Bring to a boil. Reduce heat, cover and simmer 1-1/4 hours.

2.. Add vinegar and sugar; stir. Place cabbage on top of meat. Cover and simmer 45 minutes more.

3.. Arrange meat and cabbage on a platter and keep warm. Strain drippings and skim off fat. Add enough water to drippings to yield 1 cup of liquid. Return to skillet with gingersnap crumbs. Cook and stir until thickened and mixture boils. Serve with meat and vegetables.
Yield: 5 servings

Lazy Dayz Baked Dinner          




Ingredients:
2 tbsp shortening
2 lbs beef stew meat - cut into 1 inch cubes or 2 lbs of ground beef
2 large onions, sliced
1 cup water
2 large potatoes - pared and thinly sliced
1 can cream of mushroom soup
1 cup sour cream
1 1/4 cup milk
1/4 tsp pepper
1 cup grated cheddar cheese (about 4 oz)
1 1/4 cups potato chips, crushed

Method:
Melt shortening in large skillet. Cook and stir meat and onion in shortening until meat is brown and onion is tender. Add water; heat to boiling. Reduce heat; cover and simmer 50 mins. Heat oven to 350 degrees F. Pour meat mixture into ungreased baking dish, 13 x 9 inch; arrange potato slices on meat. Stir together soup, sour cream, milk, salt and pepper; pour over potatoes. Sprinkle with cheese and potato chips. Bake uncovered 1 1/2 hours or until potatoes and meat are tender. Serves 6-8.

Dutch Oven Beef

1 tbsp. salad oil
1 1/2 lb. lean chuck, cubes
1 1/2 c. sliced onion
1 clove garlic, crushed
1/2 c. sliced mushrooms
1 tbsp. chopped parsley
Dash pepper
1/4 tsp. dried thyme leaves
1 can tomatoes

1. In hot oil in Dutch oven, saute beef cubes until browned all over.

2. Add onion, garlic and mushrooms; cook 2 minutes.

3. Add remaining ingredients, mixing well; simmer, covered, 1 1/2
hours, or until beef is tender. Serve over noodles or rice.
