Morning Orange Drink This is really great in the summer when you really would like something cool other then hot to drink in the morning Ingredients - 1 6 oz. frozen Orange Juice Concentrate
- 1 cup cold water
- 1 cup cold milk
- 1/3 cup sugar
- 1 tsp. vanilla extract
- 10 ice cubes
Directions Combine first 5 ingredients in a blender, process at high speed. Add ice cubes a few at a time, blending until smooth. Serve right away. Diabetic exchange 1 fruit, 1/2 reduced milk fat | |

Diabetic Friendly Punch
1 Large can of Orange Juice Concentrate, thawed 1 Liter of Sugar Free Ginger Ale 1 Large Bottle of Low Sugar Cranberry Juice
Mix: The recipe calculations are for 64 oz regular orange juice and 64 oz ginger ale because I couldnt get it to show concentrate or sugar free and I couldnt remember how many oz. were in each thing.

Tomato Cocktail Yield: 4 servings (3/4 cup each) Ingredients - 3 cups tomato juice
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon sugar
- 1/4 teaspoon seasoned salt
- 1/2 teaspoon Worcestershire sauce
- 1/8 teaspoon celery seeds
- 1 rib celery
Directions - Combine the juice and seasonings. Chill. Slice the celery ribs into 4 sticks. Serve a celery stick as a "stirrer" in each tomato cocktail.

Orange Jubilee Serves: 6 (4-oz. servings)
2-1/4 c. skim milk 1 small can (6 oz.) frozen orange juice concentrate Sugar substitute equivalent to 1/4 c. sugar (Splenda) 1/2 tsp. vanilla 8 ice cubes Ground nutmeg or cinnamon, optional
Process first 4 ingredients in food processor or blender until smooth; add ice cubes and process again until smooth. Serve in small glasses; sprinkle with nutmeg or cinnamon if desired.
Nutritional Analysis: One 4-0z. Serving equals: 82 calories... 1 gm fat...5 gm protein...2 mg cholesterol...1 gm fiber... 15 gm carbohydrate...48 mg sodium
Exchanges: 1/2 fruit...1/2 fat-free milk

Mandarin Coolers
3/4 cup fat free milk
1/4 cup orange juice
1 can (11 oz.) reduced sugar mandarin oranges, undrained
1 carton (6 oz.) fat free reduced sugar orange creme yogurt
1 pkg. (1 oz.) sugar free instant vanilla pudding mix
12 to 15 ice cubes
In a blender, combine the milk, orange juice, oranges, yogurt, pudding mix
and ice cubes;
cover and process for 20 seconds or until smooth. Stir if necessary.
Pour into chilled glasses; serve immediately.
Yield: 5 servings.
Nutrition Information:
Per serving (1 cup) = 99 calories, trace fat (trace saturated fat), 2 mg
cholesterol,
286 mg sodium, 21 g carbohydrate, trace fiber, 3 g protein.

Eggnog
2 cups skim milk
2 TB cornstarch
3-1/2 tsp. Equal® Measure or 12 packets Equal® sweetener or 1/2 cup Equal®
Spoonful
2 eggs, beaten
2 tsp. vanilla extract
1/4 tsp. ground cinnamon
2 cups skim milk, chilled
1/8 tsp. ground nutmeg
Mix 2 cups milk, cornstarch, and Equal® in a small sauce pan; heat to
boiling; boil,
stirring constantly for 1 minute.
Beat eggs in medium bowl. Mix about half the milk mixture into the eggs; then
add this
egg mixture to remaining milk in sauce pan. Cook over low heat until slightly
thickened,
1 to 2 minutes, stirring constantly.
Remove from heat and stir in vanilla and cinnamon. Cool to room temperature;
refrigerate
until chilled, or until serving time.
Stir 2 cups milk into custard mixture; serve in small glasses, mugs or punch
cups. Sprinkle
lightly with nutmeg.
Makes: 8 serving (serving size: 1/2 cup).
Variation: If desired, 1 to 1-1/2 teaspoons rum or brandy extract can be
stirred into the eggnog.
