Homemade Donuts

This recipe is cheap and easy to make!

Ingredients:

Refrigerated canned biscuits (the cheapest work best)
Cinnamon and sugar, mixed together for coating
Deep fryer with oil (350-375 degrees)

Directions:

Take a small film container and press it into the center of each biscuit making donut and hole... then put into heated oil to fry.  Turn donuts after the first side is browned nicely.  When done, remove from oil immediately and coat in cinnamon sugar.  I put mine in a plastic zip bag and shake well to coat. 

These are best eaten the same day!

Frugally Delicious French Toast

Whenever one of our children has a friend over-night I try to come up with something a little more exciting than Cheerios for breakfast.  This past weekend I made French toast.  It had been so long since I'd made it that the younger children had practically forgotten what it was!  I thought this would be a great addition to our collection of frugal recipes (even when you don't have company!), so here it is...

Ingredients:

6-8 slices of bread (any desired)

2 large eggs

1/2-1 cup milk (I never measure it, just add the milk until the mixture becomes a light creamy yellow.  You don't want it too watered down, and you don't want it to be too eggy either.)

2 tsp. sugar

1 tsp. ground cinnamon

Butter and syrup

Powdered sugar, if desired

Directions:

* Heat iron skillet or griddle pan to medium-high heat.  Coat pan, if needed, with cooking spray or a dab of butter or vegetable shortening.

* In a wide open bowl (I use a large cereal/soup bowl), lightly beat the two eggs and add milk, blending well.  Stir in the cinnamon and sugar, as desired, and add a pinch of salt if you'd like. 

* When the skillet is heated through, dip one slice of bread in the egg mixture, coating both sides.  Place the coated bread on the hot skillet and repeat with as many that will fit, our family-sized griddle will hold 8 slices.  

* If you can only cook two at a time in a pan or skillet, just re-stir the egg mixture before each dipping. Cook each piece of toast until lightly browned on both sides, and the egg coating looks fully cooked.

* Place the French toast on plates and serve warm with butter and syrup.  You can also dust them with a little powdered sugar for a frugally elegant touch!

6 eggs

1 C. low-fat cottage cheese

½ C. all-purpose flour

2 tablespoons cooking oil

¾ teaspoon baking powder

½ teaspoon salt

1 ¼ teaspoon vanilla



Place all ingredients in a blender container or large mixing bowl.

Cover and blend on high speed 1 minute or beat with electric mixer or

rotary beater until well blended. For each pancake, pour ¼ cup batter

onto hot, lightly greased skillet or griddle (380°F for electric

griddle). Cook on both sides until golden brown. Fill and fold and top

with apple butter, honey, syrup, or fresh fruit. Yield: Approx. 16 cakes



1 4-inch cake: 97 calories, 5.5 grams fat, 6 grams protein, 109 mg

cholesterol, 5 grams carbohydrate, 221 mg sodium

BERRY COFFEE CAKE --B

1 (3 oz.) cream cheese
1/4 c. oleo
2 c. Jiffy or Bisquick
1/3 c. milk
1/2 c. raspberries or apricot or strawberry preserves

DRIZZLE
1 c. sifted confectioners sugar
1 tbsp. milk
1/2 tsp. vanilla

Cut cheese and oleo into Bisquick mix. Turn on floured surface and knead 8 times. Roll on wax paper and spread preserves down center. Cut 1 inch strips on outer edge and fold strips over as in a braid. After baked pour drizzle over or before baking sprinkle cinnamon and sugar over top.
