Hot Dog or Sausage Burrito Sandwiches
Using 7 in flour tortillas, as many as you need Hot dogs, or sausage links (precooked ) Condiments, mustard, catsup, relish, pickle slices, onions, olives, etc
Have sausages and hot dogs cooked, and the flour tortillas warmed and in a tortilla warmer. Have the kids form a line with their plate, and (two adults making these would go quickly) prepare each kids hot dog or sausage burrito to order, putting on what they each ask for, and fold up burrito style, and cut in half and serve. Kids love them, and they're something a little out of the ordinary.

Apple Cheddar Quesadillas with Cranberry Coleslaw Quesadillas
6 Tortillas (Traditional, Fat-free, Whole Wheat or Red Chile) 12 oz shredded cheddar cheese 2 apples (any sweet, crunchy variety like Gala or Fuji), washed and sliced 2 TB butter
Cranberry Coleslaw 1/4 cup mayonnaise 2 tsp lemon juice 1 TB sugar salt to taste 1 10 oz bag shredded cabbage coleslaw mix 1 large carrot, peeled and grated 2 scallions, green and white parts thinly sliced 1/3 cup dried cranberries 1/4 cup chopped walnuts, optional To prepare quesadilla, sprinkle 2 to 3 TB cheese over one half of tortilla. Place several apple slices, barely overlapping, on top of cheese. Then sprinkle 2 more Tbs. of cheese on top of apples and fold tortilla in half. Repeat with remaining tortillas. Heat butter in skillet over medium-high heat and cook quesadillas until the cheese melts and the tortillas are golden brown on both sides.
To prepare coleslaw, whisk mayonnaise, lemon juice, 2 Tbs. water, sugar and salt together in a small bowl. Combine shredded cabbage, carrot, scallions, cranberries and walnuts in a large bowl. Pour dressing over cabbage mixture and toss well to coat. Allow coleslaw to sit at least 15 minutes before serving, tossing occasionally.
Serve immediately with coleslaw on the side. Serves 4 | |

Make a Log Cabin Sandwich 4 Sandwiches, made with your chosen filling, crusts removed Pretzel sticks 1/4 cup cottage cheese 1 tomato 1 carrot 1 radish 1 inch piece of cucumber 1. Place 2 of the sandwiches on a board and cut each into small rectangular sandwiches. 2. Cut each of the remaining 2 sandwiches into 4 triangles (halved crosswise,twice). Stack sandwiches in number 1 above to make a platform for the log cabin. Take 6 of the triangles in #2 above to form the roof of the log cabin. (serve the other triangles seperately). Arrange pretzel sticks on the roof to look like logs, sticking with a little cottage cheese or sandwich filling if necessary to hold in place. Break the remaining pretzel sticks into 1 inch lenghts to make a fence around the log cabin, using cottage cheese or sandwich filling to hold in place. Cut the tomatoes to make doors and windows. Cut the carrot to make a chimney, you may add cottage cheese to make smoke. Make flowers for the yard from radishes and carrots. Dice the cucumber finely and arrange on the platter to resemble a pathway to the log cabin. Have fun! (I think that cream cheese can be used instead of cottage cheese, your choice!) | |

Sloppy Joes 2 pounds hamburger 1 cup chopped onion 1 small can V-8 Juice 2 tablespoons brown sugar 1 teaspoon black pepper 1 teaspoon liquid smoke 1 teaspoon chili powder
Lightly brown hamburger and onion. Add other ingredients and mix well. Cover and simmer 3 hours. Serve on grilled or toasted buns.

Pizzawiches 1 lb ground round 1/2 - 1 lb Velveeta, cubed 1 can tomato soup 8 hamburger buns
Preheat oven to 325F. Using a frying pan or skillet, brown ground round and pour off any fat. Add can of soup, and cubed Velveeta (adjust amount according to your family's taste). Cook on low heat for about 3 minutes until all cheese is melted. Spread mixture on each half of 8 hamburger buns. You can also refrigerate mixture for a couple of days or freeze.
Makes 8 servings

Mini Corn Dogs 1-2/3 cups all-purpose flour
1/3 cup yellow cornmeal
1 Tbsp baking powder
1 tsp salt
3 Tbsp cold butter or margarine, cut up
1 Tbsp shortening
3/4 cup whole milk
1 pkg. (16 ounces) miniature frankfurters (about 48), drained and patted dry
Catsup and prepared mustard, optional
In a large bowl, stir together the flour, cornmeal, baking powder and salt. With a pastry blender or 2 knives used scissors-fashion, cut in butter and shortening until mixture resembles coarse crumbs. With spoon, stir in milk until mixture forms a soft dough that leaves sides of bowl.
Turn dough onto lightly floured surface; knead gently 4 to 5 times just until smooth. With floured rolling pin, roll dough into 14-inch round (about 1/8-inch-thick).
Preheat oven to 450° F. With floured 2-1/4-inch round biscuit cutter, cut out as many rounds as possible. Press trimmings together; wrap with plastic wrap and set aside.
Place 1 frankfurter on each dough round. Bring sides of dough up around frankfurter; pinch in center to seal. Place wrapped frankfurters, seam sides up, 1-1/2 inches apart, on an ungreased large cookie sheet. Bake corn dogs 12 to 15 minutes or until biscuits are golden.
Re-roll trimmings 1/8-inch-thick, and cut out additional rounds. Repeat Step 4 with remaining frankfurters and dough rounds.
Serve warm with catsup and mustard, if you like.
Makes 4 dozen corn dogs. | |
