Individual portion recipes that do not require heat.

Mud Pie

Ingredients:
Instant chocolate pudding
Oreo cookies
Milk
Gummy worms
Directions: Mix instant chocolate pudding according to the directions on the package. The children help add the "dirt" (pudding mix) and "rain" (milk) to make "mud." To make this part extra fun, I punch holes in a styrofoam bowl and when the children pour the milk into the bowl it drips like rain into the mixing bowl. The children help mix the mud with a spoon. Put 2 Oreos in a ziplock bag for each child to crush. Put the crushed Oreos in a clear punch cup, add a gummy worm and 3-4 spoonfuls of pudding.

Pineapple Bagel Spread

Ingredients for one serving:
1 mini bagel half
spoonful of crushed pineapple
1-2 spoonfuls of whipped cream cheese
Directions: Mix together the crushed pineapple and cream cheese. Spread the mixture on a mini bagel half.

Strawberry Ritz

Ritz crackers
Strawberry preserves or jam
Spreadable cream cheese
Directions: Mix a spoonful of strawberry preserves and a spoonful of cream cheese together. Spread mixture on 2 Ritz crackers. This could be made with other kinds of jam (blackberry, raspberry, etc.)

Strawberry Shortcake

Ingredients:
Mini sponge cake or piece of angel food cake or pound cake
Strawberries, sliced
Whipped cream topping
Directions: Layer ingredients in a clear punch cup.

Mini Pizza

Spread pizza sauce on an English muffin half. Sprinkle on shredded mozzarella cheese. (These could be warmed in a toaster or microwave, but that's optional.)

S'mores

Stack half of a graham cracker, half of a chocolate bar, and spread marshmallow cream on top.

Rainforest Sundae

Place chunks of pineapple, mango, and banana in a clear punch cup or ice cream dish. Add one scoop of vanilla ice cream or frozen yogurt. Drizzle chocolate syrup on top.

Banana Pudding

Ingredients:
Vanilla wafers
Vanilla or banana pudding
Sliced bananas
Whipped cream topping
Directions: Layer ingredients in a clear punch cup.

Deviled Eggs

Ingredients for one serving:
1 boiled egg, peeled, cut in half
1/4 teaspoon sweet pickle relish
1/2 teaspoon mayonnaise
Directions: Mash the egg yolks in a bowl with a fork, and add relish and mayonnaise. Mix ingredients. Spoon the mixture into the egg whites.

Turkey Tortilla

Ingredients:
Flour tortilla
Spreadable cream cheese or Cheese Whiz
Sliced turkey deli meat
Directions: Spread the cheese on the flour tortilla. Add the turkey slices and roll the tortilla.

Cinnamon Pears

Ingredients for one serving:
1/2 cup canned diced pears
1 tsp. sugar (brown or white)
1/4 tsp ground cinnamon
Directions: Put diced pears in a bowl and sprinkle on the sugar and cinnamon. (This can also be microwaved, but that's optional.)

Frozen Pumpkin Squares

Ingredients for one serving:
2 square graham crackers
1 tsp. Pumpkin-pie filling
3 Tbs. Whipped topping
Directions: Mix pumpkin pie filling with whipped topping. Spread mixture on graham cracker. Put the other graham cracker on top. Put pumpkin squares on a cookie sheet and put in the freezer.
[From The Mailbox]

Mostaccioli

We LOVE THIS STUFF!!! This is a variation of what I make.. We add hamburger.. We make it like Spagetti and then put it in the oven and its wonderful..

Kids Cooking

Mostaccioli pasta is a 1 to 2-inch macaroni tube cut on the diagonal with either a ridged or plain surface. The Italian word pasta means" paste" which refers to a dough made by combining durum wheat flour called semolina with liquid, usually milk or water. There are hundreds of shapes, sizes, thicknesses and colors of pasta. Some are made from whole-wheat flour while others are flavored with carrots, spinach, beets and tomatoes.

Preparation time: About 20 minutes

Equipment you'll need: 2 large saucepans, l lid, colander, can opener, liquid measuring cup, large slotted spoon, solid (nested) measuring cups, measuring spoons, wooden spoon, ladle, and serving platter

Safety: Ask an adult to add mostaccioli to the boiling water and to drain after cooking. The hot water and steam can cause painful burns.

Recipe

1 28-ounce can crushed tomatoes

1 tablespoon honey -- We dont use this.

1 tablespoon Italian seasoning

1 tablespoon unsalted butter

8 ounces mostaccioli

1/2 teaspoon kosher salt

1/2 teaspoon fresh ground pepper

Grated Parmesan cheese or regular cheese to top.

Sauce

1. Add crushed tomatoes, seasoning and honey to a saucepan.

2. Mix with a wooden spoon and bring to a boil.

3. Immediately reduce heat, add butter, cover and simmer until pasta

is cooked.

Pasta

1. Bring 8 cups of water to a boil.

2. Add mostaccioli and wait for water to return to boiling point.

3. Cook until "al dente" (firm to the bite), approximately 10 to 12 minutes. Stir occasionally.

4. Remove from heat and spoon into a colander to drain.

Serve

Using a large slotted spoon, place pasta on serving platter, ladle sauce over and sprinkle with Parmesan cheese.

Yield: 4 servings.

Clean up: Rinse cooking utensils, pans and dinner plates as soon as possible. Dried pasta is hard to remove. A good cook always cleans the kitchen!

Mini Meat Loaves

We add BBQ sauce to ours.. as stated in paragraph from site.

Kids Cooking

Meatloaf is a mixture of ground meat and other ingredients, such as eggs, breadcrumbs and seasonings, shaped into a loaf or ring, then baked. Although ground beef is the most popular meat used in meat loaves, it is by no means the only suitable meat. Ground ham, turkey, and pork are equally as tasty. A meat loaf made with a mixture of ground meats offers a flavorful combination. For variety add chopped onions, peppers or mushrooms. Try adding a glaze of barbecue sauce or jelly to make meat loaf special.

Preparation time: About 15 minutes

Equipment you'll need: 2 large bowls, 1 small bowl, wooden spoon, table knife and fork, scoop, liquid measuring cup, solid (nested) measuring cups, 12-cup nonstick muffin pan, meat thermometer, cooling rack and serving platter,

Safety: Use dry potholders to place muffin pan into the oven and remove. Use a dry potholder to hold muffin pan while removing mini-loaves from baking pan. Wait until pan cools before washing.

Recipe

1 pound lean ground meat

1 large egg

1/4 cup ketchup

1 cup whole grain quick-cooking oats

1 tablespoon Italian seasoning

1 tablespoon packed light brown sugar

1. Preheat oven to 350-degrees.

2. Place ground meat in large bowl.

3. In a small bowl beat egg with a fork and stir in ketchup. Pour mixture over meat and blend together

with a wooden spoon.

4. In another bowl mix together oats, Italian seasoning and brown sugar with a fork. Stir into meat

mixture. With a scoop form meat into 8 balls and put into muffin cups.

5. Bake for 15 to 20 minutes or until well done. Meat thermometer should read 160- degrees or

juices should run clear. Remove pan from oven and place on a cooling rack. Let stand for 5 minutes. Carefully loosen each mini-loaf with a table knife and place on serving platter.

Yield: 8 servings.

Clean up: While meat loaves are baking, set the dinner table. Leave the kitchen clean!

Strawberry Shortcake Cups

RECIPE INGREDIENTS:

Cups:

2 cups all-purpose flour

2 tbsp. sugar

2 tsp. baking powder

1/2 tsp. salt

6 tbsp. butter

2/3 cup milk

Strawberry Topping:

1 pint strawberries

1 tbsp. sugar

Whipped Cream:

1 cup whipping cream

2 tbsp. sugar

1/4 tsp. vanilla extract

1. Heat the oven to 400 degrees. Help your child butter a 12-cup muffin tin.

In a large mixing bowl, stir the flour, sugar, baking powder and salt.

2. Cut the butter into pieces and work it into the flour with your

fingertips. Add the milk and stir until well combined, working the dough with your

hands if necessary.

3. Turn the dough out onto a lightly floured surface. Using a rolling pin,

roll it out to a 1/4-inch thickness. Using a widemouthed glass, cut the dough

into rounds. Roll out each round to about 4 1/2 inches in diameter.

4. Place them in the cups of the buttered muffin tin (the dough should line

the cup and come up to the brim). Crimp the edges. Bake for 10 to 12 minutes

or until the edges are light brown. Let cool in the pan before removing to a

plate.

5. Meanwhile, prepare the strawberries. Wash and hull the berries and ask

your child to use a plastic knife to slice them into a bowl. Toss with the sugar

and let sit.

6. To whip the cream, pour the whipping cream into a chilled mixing bowl.

Using an electric mixer, beat for 2 minutes on medium-high or until soft peaks

form. Add the sugar and vanilla extract and beat for another 30 seconds.

7. Now you're ready to assemble the Strawberry Shortcake Cups. Fill each cup

with a spoonful of whipped cream and top with several strawberry slices.

Makes 10 to 12 cups.

8. TIP: Your child should use her forefinger and thumb to crimp the dough

edges. The crimps don't need to be perfect. Unlike pie dough, which holds its

shape when baked, this dough rises and puffs like a biscuit.

Orange No Bake Cookie Recipe

I love this easy cookie recipe on a hot summer day because they don't require heating up the oven!  No bake cookie recipes are wonderful for the kids because they can almost make the entire recipe with minimal supervision.  This is definitely a must add to your list of cookie recipes.

Ingredients

?3 cups powdered sugar
?1 lb. vanilla wafers, crumbled
?1 stick of butter, melted
?1/cup finely chopped walnuts
?1 6oz. can frozen orange juice (thawed)
?1 can coconut (for rolling on outside of cookies)

Directions

Combine the powdered sugar, vanilla wafers, butter, walnuts and orange juice in large bowl.  Mix ingredients until just evenly distributed.  Shape into 1 inch balls and roll in coconut.

Refrigerate until serving up to 5 days.

NOTE:  You may substitute chopped Brazil nuts or macadamia nuts for the coconut.

NOTE:  These cookies should not be stored outside of the refrigerator.  The high oil content in the coconut could cause it to spoil very quickly if not refrigerated.

Want to get a real taste of the circus in your own home?

Try making these homemade cracker jacks, an enduring family favorite that has long been associated with animals and circus performances.

These homemade cracker jacks are simply delicious and rather easy to make. Just make sure to ask a responsible adult for help since this recipe requires using the stove.

  • 1 cup honey
  • 1/2 stick butter
  • popcorn
  • peanuts

  1. Pop your popcorn according to the directions.
  2. Mix as many peanuts as you think you’d like to the popcorn and put this mixture to the side.
  3. Heat your honey and butter in a saucepan until the mixture is well blended.
  4. Pour the honey and butter mixture over the popcorn and peanut mixture and stir as you pour.
  5. When the popcorn and peanuts are well coated, spread it all in a pan.
  6. Bake in an oven that is 350 degrees for about 5-10 minutes and stir it frequently.
  7. Cook until crisp. You don’t want it to turn too brown so keep your eye on it.

Let cool and enjoy!!!

Marshmallow Pilgrim Hats for Thanksgiving

Here's a treat that looks old-fashioned but is made with two
favorite modern-day sweets: marshmallows and chocolate.

Ingredients

24 chocolate-striped shortbread cookies
12-ounce package of chocolate chips
24 marshmallows
tube of yellow decorators' frosting

Directions

Set the chocolate-striped cookies stripes down on a
wax-paper-covered tray, spacing them well apart. Melt the
chocolate chips in a microwave or double boiler.  One at a time,
stick a wooden toothpick into a marshmallow, dip the marshmallow
into the melted chocolate, and promptly center it atop a cookie.
Using a second toothpick to lightly hold down the marshmallow,
carefully pull out the first toothpick.  Chill the hats until the
chocolate sets, then pipe a yellow decorator's frosting buckle on
the front of each hat.

Hard-Boiled Egg Mice

1 each egg, black olive, radish

2 fresh chives

1 tiny Swiss cheese wedge

Directions

Place egg in a small saucepan and cover with cold water. Bring

to a boil over high heat. Boil for 1 minute, then turn off heat.

Cover saucepan and let egg sit in hot water for 12 minutes. Once time

is up, run egg under cold water to cool. Then ask your child to roll

egg on all sides to crack shell. Peel under running water. Slice egg

in half lengthwise. Place halves, yolk side down, on a plate

(alternatively, you can slice off a bit of the bottom of a peeled,

hard-boiled egg so it can sit flat on a plate.) Slice tiny black

olive "eyes and radish "ears." Then make small slits in egg halves

for eyes and ears and push in olives and radishes. Add chive tails.

Serve pair of egg mice with a wedge of Swiss cheese for a playful lunch.

Makes 2 mice.
