Southern-Style Boiled Peanuts - Genie

6 cups water
1/3 cup salt
1 pound raw unshelled peanuts

Place water in 6- or 8-quart Presto pressure cooker. Stir in salt.
Add peanuts. Close cover securely. Place pressure regulator on vent
pipe.  Cook 40 minutes at 15 pounds pressure. Let pressure drop of
its own accord. Let peanuts cool in cooking water, then drain.

SAUSAGE STUFFED CHEESE - Genie

8 oz. Cheddar Cheese, shredded
1/2 pork sausage
1 clove garlic, minced
1 Tbs. tomato paste
1 tsp. chili powder
1/2 tsp. dried oregano
1/2 tsp. ground coriander
1 1/2 cups water 

Tortilla chips

Crumble sausage and cook with garlic in skillet over medium heat
until brown.  Discard excess fat.  Mix tomato paste, chili powder,
oregano, and coriander with sausage.  Place half of the cheese in
a 2-cup casserole.  Spoon sausage mixture over cheese in casserole.
Top with shredded cheese.  Cover casserole securely with aluminum
foil.  Place cooking rack and water in pressure cooker.  Place
casserole on rack.  Close cover securely.  Place pressure regulator
on vent pipe.  Cook 5 minutes at 15 pounds pressure.  Quick cook
cooker.  Serve immediately with tortilla chips.
