Two more months and Christmas is here.

This Christmas will be special as a lot of folks will have had massive changes in their lives and many will be away from home.

Those of us lucky enough to be home with loved ones and friends could do something special. I always say to the kids we will bake together etc. but then last minute shopping etc, kind of stops this homey feeling and doing things together. So I vowed and marked the calendar a day where we will just bake cookies and cakes together and not mind how messy the kitchen will become.

So I beg you to share your best recepies for cakes and cookies with us all.

Peace

Dani

This is a German recepie, hence it will be in G (grams).

1 KG  (Kilogram) is 1000 G (Grams) and also 2.2 Pounds

Vanilla Pretzels (cookies)

175 G flour          sieve onto large flat clean table area (plastic mat for baking etc.) into a pile and make a round indent into the middle of the pile

1 egg                   drop egg into the indent and add on top and on around the pile

50 G sugar

1 Tablespoon Vanilla sugar

50 G Almonds (ground fine and without the brown skin)

100 G Butter (Not Margerine!!!) cut into bits sprinkeld all around the pile.

Use fingers to mix it all together in a kneding motion very quickly. Put the lump into a bowl and into the fridge for 10 to 20 min. then take the lump and break off little pieces to make little rolls double the length of our ring fingers. Form into Pretzels and place into fridge again so that they keep their shape due to the high butter content they would otherwise run and turn flat.

Heat the oven to 180 Centigrade, then place Pretzels in oven for about 10 min until they are a very light golden yellow.

Straight after baking cover with the Vanilla Glaze and let them dry:

250 G Glazing sugar or very fine powder sugar for glazing
1 Tablespoon Vanilla sugar
1 Teaspoon lime
3 1/2 Tablespoons water (very hot water)

or you can also use a chocolate glaze, rum glaze or moccaglaze.

Enjoy!

Peace
