Star Zucchini Bread
Have a bumper crop of zucchini? You’ll be a star with neighbors if you leave this moist, sweet zucchini bread with them.

Prep Time:15 min
Start to Finish:2 hr 20 min
Makes:10 servings

 

3 cups Gold Medal® all-purpose flour
2 cups shredded zucchini
1 1/2 cups packed brown sugar
2/3 cup vegetable oil
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/4 teaspoon ground nutmeg
4 eggs

1. Heat oven to 350°F. Generously spray 12-cup star-shaped bundt cake pan with cooking spray.
2. Mix all ingredients with spoon until well blended. Pour into pan.
3. Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Turn pan upside down onto wire rack; remove pan. Cool completely on wire rack, about 1 hour.
