Ingredients:
1 and half sticks of Butter or top quality margerine
1 big white onion, pealed and sliced thin
1 small bundle green onions
Teaspoon Salt
Teaspoon Cayenne Pepper, or substitute salt and pepper with cajun seasoning
Tablespoon Minced Garlic
Tablespoon Corn Starch
2 cups water
1 pound of shrimp, or 1 pound of crawfish, or 1 pound scallops..Is a flexible sauce
For every pound of meat added add 1 stick more of butter or margerine
 
Melt butter in a medium cooking pot
Sautee' onions in till cooked down
Add water,seasoning,garlic(not corn starch) and simmer at low boil for 20 minutes
Add 1 pound of meat(shrimp) and simmer on low boil for 20 minutes
If more water is needed to cover the meat about an inch..Add some
Mix tablespoon of Corn Starch with 1/4 cup water and stir till milky
Add little at a time till sauce is thick to your liking.Taste sample and season more if you wish
