bread the slices, add one or 2 sliced jalapeno peppers then fried them altogether like you do fried potatoes. Instead of being crispy they would be softer and with a kick from the pepper. You can also add a sliced zuchinni to this and have a dish with a nice blend of flavors.
slicing tomatoes 1/4 inch thick, put in egg wash, then coat in seasoned cornmeal. Fry 3 or 4 minutes or until golden on botton. Gently turn and fry the other side. Place on paper towels or brown paper bag to keep tomatoes from being greasy. Try them for breakfast. They are great. I also like to put ranch dressing on them for appetizers. slice thick, 1/2 inch or so. Then I flour them and drop them right into hot canola oil......brown em drain em and eat em! Oh, do salt and pepper either the flour or do it right as they come out when you drain them. I just eat them as a side dish or by themselves with bread.
