Carrot Daisies:
cut carrot in 1/8 inch slices.Press out flower with
truffle cutter.Remove center with end of a pencil with the eraser
removed.Place a turnip disk on carrot center and spear with toothpick.Group
daisies in a bouquet with bright parsley.
Cucumber Twists:
Slice unpeeled cucumber very thinly.Cut cucumber
slice on 1 side to the center and twist each end in opposite
directions.Chill in ice water.
Onion Mums:
With sharp knife cut white or red onion into thin
slivers from top to bottom,leaving bottom attached.Stop cuts about 1/2 to
1/4 inch from the bottom.Soak in ice water to open petals.Mums may be
colored by adding a few drops food coloring to ice water.
Radish Roses:
Use round red radishes.Start at root end and cut thin
strips of red peel through almost to stem.Place in ice water and petals will
open.
Tomato Roses:
Use a vegetable peeler or cut 1 long continuous piece
of tomato peeling,beginning at the stem end and peeling close to surface to
pervent stretching or breaking strip.Wrap peel around finger and place on
plate.Refrigerate.
Turnip Flowers:
Peel small white turnip.Cut into 1/16 to 1/8 inch
slices.Cut small slice of carrot.Make hole in center of turnip slice the
size of the carrot and insert carrot for center.Cut petals around edges in
daisy design.
Celery Fans:
Cut celery rib into 3 inch lengths.Make paralled cuts
forming narrow strips almost to the end, or cut each end of the celery
almost to the center of each piece.Place in ice water and the slit ends will
fan out and curl.
Carrot Curls:
Use medium or largew carrots.Cut in half,lengthwise.Use a
double -edge vegetable peeler to cut paper thin lenghtwise strips.Roll each
strip into a curl and fasten tightly with a toothpick.Place in ice water for
at least 1 hour.Remove toothpicks just before using.
Radish Fans:
Use oval-shaped radishes.With knife make thin cuts across
the radish,cutting about 3/4 of the way through.Leave at room temperature
until slits spread easily.Chill in ice water at least 1 hour.
Tomato Flowers:
Select tiny or cherry tomatoes.Cut into sixths or
eights without cutting throught the bottom.Separate carefully.
Cucumber Wheels:
Score the surface of a peeled or unpeeled
cucumber by running tines of a fork along the lengthwise surface.Cut thin
slices and crisp in ice water.
