Citrus Basket:
Slice orange,lemon,or grapefruit in half and scoop fruit from
shell.Cut a thin strip of peel from the top of each side of the shell.Leave
peel connected on either side at center.Lift the 2 cut edges and tie
together at center woth ribbon.Use as dish for relish,salad,or dessert.
Lemon Butterflies:
Cut lemon in medium slices and cut each slice in half.Starting at the rind
side,cut each slice almost to the center and force these cuts apart so the
half slice forms wings.Apiece of parsley placed in center of wings makes the
butterfly`s body.
Mint Cubes:
Place a sprig of mint and thin lemon segment in each ice cubesquare or in
ice ring before freezing.Use ice cubes in iced tea or minted fruit punch.
Cranberry Cutouts:
Slice a can of cranberry sauce into 1/8 to 1/4 inch slices.Use small cookie
cutter or knife to cut out decorative shapes for the appropriate season,such
as Stars for Christmas.
Strawberry Fans:
Wash beries and leave stem attached .Turn stem end down and being careful ot
to cut throughthe stem,make cuts 1/8 inchapart.Separate very carefully.
Citrus Cups:
Use knife to make zigzag diagonal cuts around the middle of
lemons,oranges,or a grapefruit.Cut through to center core.Separate halves of
fruit.Serve fruit as is or remove pulp and fill with relish,fruit,or
salad.To keep cup level ,remove a thin slice from bottom.
Citrus Cartwheels:
With sharp paring knife cut thin slices from limes,lemons,or oranges.Cut
notches in the rind of each slice.Dip edges in chopped parsley.
Citrus Twists:
Cut lemon,lime or orange slices 1/8 inch thick.Start a cut almost at center
of slice and extend cut through outside edge.Twist cut edge in opposite
directions.
Fruit Kebabs:
Place comination of 3 or 4 small pieces of fruit such as
pineapple,orange,banana,apple and cherry on wooden pick or skewer.
Easter Ham Daisies:
Cut 20 (1 inch ) petals of candied oranges peel and fastern each petal to
ham with cloves.Center each daisey with candied cherry half.
