2/3 cup warm water
1 package yeast
1 1/2 tbsp. sugar
1 1/2 tsp. salt
1 tbsp. shortening, softened
1 ( No. 2) can yams, drained and mashed
3 1/2 cups all-purpose flour, sifted
3/4 cup raisins (optional)
Measure water into large mixing bowl. Stir in sugar and salt. Add yeast and dissolve. Add shortening and yams; mix until thoroughly blended. Combine flour and raisins; add to yeast mixture in 2 additions, mixing until blended after each addition. Turn onto floured surface and knead until dough is smooth and elastic. Place in greased bowl; cover and let rise in warm place until double in bulk. Punch down and let rise a second time. Roll out to 1/4-inch thickness and cut with floured 2-inch round cutter or shape into rolls. Place on greased baking sheets. Cover and let rise. Bake in hot oven of 425F for 12 minutes.
