This is fun and great for something a little different than the norm.
1 1/2 pounds ground beef
1 jar of Pasta Sauce (regular size jar)
1 Large egg
1/4 Bread crumbs(Italian is best)
2 cups shredded mozzarella(about 8 ounces)
1 tablespoon chopped parsley
Preheat oven to 350 degrees. In a large bowl mix 1/3 cup of Sauce,egg, and bread crumbs. Season with salt and pepper if desired. In a 13x9 inch baking or roasting pan shape into a 12x8 rectangle. Sprinle 1 1/2 cups of cheese and parsley down center leaving 3/4- inch border. Roll, starting at long end, jelly roll style. Press ends together to seal. Bake uncovered about 45 minutes. Pour remaining sauce over meatloaf and sprinkle with remaining 1/2 cup of cheese. Bake an additional 15 minutes or untill cheese is melted. Let stand 5 minutes before serving. (Makes 6 servings)
