Corn Bread with Calendula Petals
 
 
Ingredients:
1 cup yellow cornmeal
2 cups unbleached flour
2 teaspoons baking powder
2 extra-large eggs
1 cup milk
3 teaspoons corn oil
1 cup shredded cheddar cheese
1 cup corn kernels, fresh or canned
1 cup calendula petals
 
Directions:
Preheat oven to 375 degrees.  Butter an 8 x 8" pan.  In a mixing bowl, combine cornmeal, flour, baking powder, and salt.  In another bowl, beat eggs, add the milk and oil, blending well.  Stir in chees and corn.  Pour the wet ingredients into the dry ingredients and blend well.  Stir in the calendula petals.  Fill the baking pan almost to the top of the pan.  Bake for 20 minutes, or until the top is a nice golden brown color.  Let stand 5 minutes before cutting.  Serve with butter and honey.
