*Serving size:* Serves 8
*Cooking time:* Less than 30 minutes

Lemon and apricot friands
INGREDIENTS

1½ cups icing sugar
½ cup plain flour
1 cup almond meal
¾ cup dried apricots, chopped, plus 1 tablespoon extra
Finely grated zest 1 lemon
6 egg whites
185g unsalted butter, melted
1 tablespoon lemon juice

METHOD

1. Preheat oven to moderate, 180°C. Lightly grease recesses of a 12-hole
friand pan.
2. Sift icing sugar and flour together into a large bowl. Blend in almond
meal, apricots and zest.
3. In a small bowl, lightly whisk egg whites with a fork until frothy.
Add to dry ingredients and mix lightly.
4. Blend in butter and juice, stirring until combined. Divide mixture
among prepared recesses. Sprinkle each with extra apricots.
5. Bake for 15-20 minutes until golden and cooked when tested with a
skewer. Cool in a pan for 5 minutes before turning onto a wire rack to cool
completely.

*Top tips*

- Substitute dried apricots for any other dried fruit of choice
- These are delicious served warm with a little thick cream.
