Diabetic Cinnamon Raisin Bread Pudding
 Ingredients :
  • fat-free milk -2 cups   
  •  Equal® Spoonful -2/3 cup OR Equal® sweetener -16 packets   
  • 1 Stick butter or margarine, melted  -4 Tbsp   
  • egg -1 ea    
  •  egg whites  - 2 ea    
  • cinnamon -1 tsp    
  • 3/4-inch cubes day-old cinnamon raisin bread - 4 cups   
 
Preparation Instructions :
 
1  Combine milk, Equal®, melted butter, egg and egg whites, cinnamon and salt in large bowl. Stir in bread cubes.    
     
2  Spoon mixture into ungreased 1-1/2 quart rectangular casserole. Bake in preheated 350 degree F oven 30 to 35 minutes or until pudding is set and sharp knife inserted near center comes out clean.
