Spinach Salad with Mandarin Oranges
7 cups torn, fresh spinach
1 1/3 cups chopped red onion
1 (11 ounce) can mandarin oranges, drained
2 1/2 tablespoons red wine vinegar
1 1/2 tablespoons water
1 1/2 tablespoons olive oil
1 1/2 tablespoons honey
1/2 teaspoon beef bouillon granules
Combine first 3 ingredients and toss gently. Combine remaining
ingredients and whisk until bouillon granules dissolve. Pour dressing
over spinach mixture and toss gently.
Makes 6-8 Servings
