Pineapple Yams 4 �tablespoons butter 3 �tablespoons brown sugar 2 �tablespoons light cream 4 �slices pineapple 2 �cups mashed cooked yams (or sweet potatoes) 1/4 - cup milk 1/2 - teaspoon salt 1/2 - teaspoon pepper - Into a small saucepan, add 2 tablespoons butter and brown sugar. Over low heat, blend. Stir in the cream. Now add a slice of pineapple at a time, turning so that you glaze both sides. Remove pineapple slices to a heated plate or thermal container.
- In the saucepan, add the yams, milk, 2 tablespoons butter, salt, and pepper. Beat the ingredients until they become fluffy. Now spoon ingredients over pineapple slices and serve.
