1 6 oz can red salmon, drained, skin removed and bones mashed
1/2 Small Cucumber
1 T. Mayonaise
2 t. chopped fresh dill or 1/2 t. dried dill
1 t. fresh lemon juice or 1/2 t. reconstituted lemon juice
1 low carb tortilla
1 large leaf of lettuce
salt and pepper to taste
Combine salmon, cucumber mayoniase, dill, lemon juice, salt and pepper in a bowl and mix. Place lettuce leave on tortilla and cover wtih salmon mixture. Roll up and wrap tightly in plastic wrap.
