| Indoor Preparation Butterfly and flatten each chicken breast by pounding with a meat cleaver. Sauté garlic in olive oil or butter for 1-2 minutes. Add spinach and cook until wilted. (This can be done in a non-stick skillet on the grill, or indoors.)
Lay a thin layer of wilted spinach onto the chicken breast with the goat cheese and a couple of pieces of each red and yellow pepper slices.
