EUROPEAN PANCAKES EUROPEAN PANCAKES 1c. all-purpose flour 6 slightly beaten eggs 1c. milk 1/4c. butter or margarine, melted 1/2t. salt 1. PREHEAT OVEN TO 450 DEGREES. Gradually add flour to eggs, beating with an electric hand mixer. | 2. Stir in milk, melted butter or margarine, and salt. | 3. Thoroughly grease a 13x9-inch oven-proof casserole. | 4. Pour batter into cold casserole; bake in very hot oven for about 20 minutes. | 5. Loosen pancake from casserole with wide spatula; cut into squares with a sharp knife. | 6. Serve with confectioners sugar, lemon wedges, or fruit. | OPTIONAL FRUIT FILLING 2 to 3 applies, peeled and thinly sliced. 2 to 3T. margarine 2T. brown sugar 1/2t. cinnamon 1. Mix the brown sugar and cinnamon with the sliced apples. | 2. In a heavy skillet, melt the margarine and add sliced apples. Sauté gently until tender but not mushy.
