Captain Cook's Country Chicken Nana's Country Chicken Ingredients 2 fryers, dijointed Seasoned flour 1/2 c shortning 2 onions finely chopped (optional) 2 green peppers chooped 1 glove of garlic minced (optional) 3-4 tsp curry powder 1 1/2 tsp salt 1/2 tsp pepper 1/2 tsp thyme 2 1 lb 3 oz cans tomatoes 1 tbsp chopped parsley 6 c hot cooked rice 1/4 c currants 1/4 c toasted almonds Procedure Cover the chicken fully with seasoned flour and fry in shortning in a skillet and browned. Remove chicken and keep warm. Cook the onions , green peppers, and garlic in the remaining shorting in the skillet until tender. Sir in the curry powder, salt , pepper and thyme and mix well. Add the tomatoes and parsley and heat through . Place chicken in a large casserole and pour tomatoe mixture over the chicken. Cover. Bake at 350 degrees for 45 minutes or until chicken is tender. Place the chicken on a serving platter and mound the rice around chicken. Spinkle currants in tomato sauce and pour over rice.
