We have had so many courgettes that we have been sharing them with friends and neighbours.
My grandsons love soup so today I made courgettes into a soup for our lunch and the verdict was: "very yummy." Halfway through the afternoon Harry went out to the kitchen and popped another helping into the microwave for himself!
I have added it to the Soup Recipe Board just in case some of you have a load of courgettes.
We debated as to wether to add fresh mint or chilli flakes to the recipe.
We chose a small pinch of chilli flakes added to the recipe and it worked really well.
