Dixieland Piccalilli Recipe 1 lb Green tomatoes sliced into 1/2 moons
1 ea Green bell pepper julienned
2 ea Zucchini sliced into 1/2 moons
1 ea Onion cut in 1/2 & sliced thin
1/2 c Sea salt
1/2 c Cider vinegar
1 c Light brown sugar
1 ts Celery seeds
1 ts Mustard seeds
1 ts Ground ginger
1 ea Cinnamon stick
1/2 ts Turmeric
2 bay leaves
1/4 ts Whole cloves
1/2 ts Whole black pepper
2 tb Salt

Yield: 1 batch
Prepare vegetables.
Add 1/2-cup salt to them then allow to sit overnight.
Drain vegetables.
Place in heat-proof bowl.
Place remaining ingredients in saucepan.
Bring to a boil.
Pour this mixture over vegetables & allow to cool.
Refrigerate then serve as needed.
Keeps refrigerated for about 10-12 days.
