Banana, Zucchini, or Pumpkin Muffins Banana, Zucchini, or Pumpkin Muffins Ingredients 2 cups regular flour 1/3 cup sugar 1 Tables. baking powder 1/2 teas. salt 1/2 cup milk 1/4 cup oil 1 egg 2 bananas, mashed Procedure In large bowl, combine flour, sugar, baking powder, and salt and mix well with fork. Add oil, milk, and egg and mix well with fork. Add bananas and mix in. Fill baking cups to 1/2 full, bake at 400* for about 20 minutes. For pumpkin muffins, substitute 1 cup solid pack pumpkin and 1/4 tes. cinnamon. For zuccini muffins, substitute 1 cup grated zucchini. Serving Information - Serves: 12
