Manicotti 1 lb ground beef 1 clove of garlic crushed 1 small finely chopped onion 1 cup creamed cottage cheese 1 package of shredded mozzarella cheese(4 oz.) (note, I purchase a bigger one and sprinkle the rest on the top before baking.) 1/2 tablespoon salt 1/2 cup mayonnaise(not salad dressing) Manicotti noodles (Usually, they come in a box of 16) 1 jar of spagetti sauce (16 oz.) parmesan cheese(optional) Brown the beef, onion and garlic-Drain the fat. Mix garlic, onion, cottage cheese, mozzarella cheese, mayonnaise and salt in a bowl. After cooking the manicotti noodles according to package directions, drain. Fill the manicotti with the meet filling. Place in a backing dish, cover with sauce, sprinkle on extra mozarella cheese and or parmesan cheese. Cover with foil and bake at 350 degrees for 15 minutes, remove foil and bake 10 minutes longer until done. For those of you that are avoiding regular noodles and using wholewheat noodles, wholewheat can be used instead. I have not found a whole wheat manicotti noodle but I have used a whole wheat lasagne noodle. I cut them in half, lay they over lapping and roll the meat sauce in them. This is a good.
