1/4 Cup shredded jack cheese Lawry's seasoning salt
Heat up a non-stick frying pan to medium-hot. Add cheese and evenly distribute into a pancake shape. Sprinkle as much seasoning asyou like on top of melting cheese. Cook until you can see the edges curling and/or darkening a bit. Carefully slip teflon spatula underneath cheese and lift around edges, and then flip over to cook side #2. Cook until set and a little stiff, and remove to a paper plate to blot and immediately cut into 4-6 wedges. (If you like chewy chips, remove from pan after side #2 is done. For crunchier chips cook a little more on side #1, but don't let it darken too much - burned cheese worthless!) Repeat process as many times as you need to...
VARIATIONS: Cheddar cheese and chili powder, or Parmesan and a little oregano sprinkle, or Romano and a little garlic salt or pepper/jack cheese and salt... just use your preferences. Great with dips, and salsa too, home-made OR jar!
