6 cups whole almonds 1/2 cup light honey 1/3 cup butter 1 teaspoon ground cinnamon 1/2 teaspoon ground cloves 1 1/2 teaspoon salt (optional)
Preheat oven to 350 degrees. Place butter in a large bowl. Microwave and heat until softened, about 1 minute. Add honey and heat about another minute until the butter is melted and the honey is warm. Add the cinnamon and cloves and stir to an even consistency. Pour in the whole almonds and stir until completely coated.
Spread the almonds and any remaining syrup onto a rimmed baking sheet. Bake for about 20 minutes, stirring every five minutes to toast the almonds evenly. Remove from the oven and spread on waxed paper. Discard any excess syrup. Sprinkle with salt, if desired. Stir nuts occasionally as they cool to prevent them from sticking. Store in an airtight container.
