Sausage-Cabbage Bake
 
1 tb Vegetable oil
3/4 c Sliced onions
1 c Diced red apples
3 c Shredded green cabbage
1 c Chicken broth
1 lb Prepared pork sausage, Chopped
1 tb Creole seasoning
 
 
Preheat oven to 375 degrees F. In a large skillet heat oil with onions
and apples over medium heat; sweat until onions are tender, about 5
minutes. Fold in cabbage and toss well. Add broth, sausages and season
to taste with Creole seasoning. Cook just until cabbage wilts. Transfer
mixture to a baking dish. Bake until hot and golden brown, about 25
minutes.

Savory Sausage Stew
 
1 lb Italian sausage links, casings removed
2 tb Olive or vegetable oil
1 md Onion, sliced
2 Garlic cloves, minced
2 Fresh Idaho potatoes, cut into 1-inch pieces
1 Green or red pepper, cut into strips
1 teaspoon dried basil leaves
1/2 ts Salt
1/8 ts Pepper
1 md Tomato, cut into chunks
1/4 c Chopped fresh parsley
 
 
In 3-quart microwave-safe casserole combine sausage, oil, onion and
garlic. Cover loosely with plastic wrap; cook on High 7 to 9 minutes
or until sausage is cooked, stirring twice to break up meat. Stir in
potatoes, green pepper, basil, salt and pepper. Re-cover; cook on
High 14 to 16 minutes or until potatoes are tender. Stir in tomatoes
and parsley. Re-cover; let stand 5 minutes .
